This recipe makes 5 one cup servings.
One cup =4 points
1 tablespoon olive oil
1 chopped onion
1/2 cup green pepper,chopped
1 clove garlic,minced
1 tablespoon chili powder
1 teaspoon cumin ( optional)
2 16 oz can kidney or red beans,DRAINED
1 16 oz can stewed tomatoes chopped
1/2 cup mild picante sauce or salsa
Saute onion,garlic & green pepper in oil.
Add chili powder & cumin.
Add drained beans,tomatoes and picante sauce.
Simmer until heated.
Serve over your favorite rice.
This can be made early and warmed up easily and served over instant rice.
My husband liked a little hot sauce in it as well.Any kind of canned tomatoes work in this recipe.
