Yield 8 servings / 3 pts per square
2 cups vanilla or chocolate reduced fat ice cream
1 cup frozen non dairy reduced calorie whipped topping (aka Cool Whip Lite)
1/4 cup crunchy peanut butter
1 box (1.1oz) low calorie instant pudding, chocolate or vanilla
Let ice cream and whipped topping soften to room temp. (about 10 min).
In a chilled bowl, beat with an electric beater to whip together the ice cream, whipped topping, peanut butter and pudding mix until smooth (about 5 min).
Freeze in an 8x8 inch square dish until solid, about 2 hours
Cut into 8 squares.
