Laurie's quick lunch

3 oz water-packed tuna fish, drained
2 tsp mayonnaise
1 large yellow pepper(s)

Wash and dry your pepper. Cut off the top and scrape out the inside seeds and membrane. Mix the tuna with the mayonnaise. Stuff the pepper and enjoy. This takes a long time to eat because it takes a long time to chew the pepper! You can make the recipe with less points by substituting the regular mayonnaise with something else. You could also add diced scallions or other veggies to your tuna.
Also a good lunch to pack the night before and take it with you.
(I supplemented this lunch with jalapeno pepper corn chips ....num num.)
