Breakfast: COUSCOUS PANCAKES - Thanks LeaderLaurie!
6 pancakes @ 1 point each
(plus points for whatever syrup or toppings you may use)

1 cup couscous
1 tsp cinnamon
1 tsp vanilla extract
2 egg whites (or egg substitute)

Mix all ingredients and cook in skillet sprayed with olive oil as if making a pancake.

(Taste like french toast and I like them plain but will put strawberries and ff cool whip or slice a banana and put it between two of them with a little peanut butter.)
