6 Medium sized zucchinis
1 Ib ground lean beef
1 Onion chopped
1 Jar Light Ragu tomato sauce, or Jar that is 3 grams fiber and 1 point for half cup
2 cups Fat Free Mozz cheese

Preheat oven to 350

Slice zucchinis (not too thin). Place in a bowl and put into microwave to soften. Chop onion. Add to medium skillet and coat with Fat Free butter cooking spray. Add meat and brown. Drain Fat. In a large glass baking pan add all zucchini slices. Pour meat/onion mixture over the top. Pour Jar of sauce evenly over the top of the meat. Cover with foil and bake for 25-30 minutes. Uncover and sprinkle cheese on top. Bake until cheese is melted.

This can also be made using Frozen meatless beef crumbles for less points. If using beef crumbles or have left over browned meat, can make a single serving. Use 1 zucchini, 1/2 cup meat and 1/2 cup sauce. Heat zucchini in microwave until soft. Add meat and sauce and heat until cooked. Sprinkle cheese on top and eat when melted.
