1 Ib Ground Beef
1 Onion chopped
1 Clove Garlic minced
1 Jar Light Ragu tomato sauce, or Jar that is 3 grams fiber and 1 point for half cup
2 Cups cooked Rice
4 Green or Red peppers
Fat Free Cheddar Cheese

Preheat oven to 350

Chop onion and garlic. Cut off tops of peppers and clean out inside. Chop leftover tops of peppers. Add onion, garlic and chopped peppers into medium skillet. Coat with fat free butter flavored cooking spray. Cook until onion and peppers are tender. Add beef and brown. While browning meat Boil rice to make 2 cups cooked. Place peppers in microwave with wet paper towel over the top to soften. Once meat is browned drain fat and add 1 Jar of tomato sauce. Once rice is cooked add rice and simmer 10 minutes. Place mixture into all 4 peppers. Cover with foil and place in oven for 30 minutes. Remove foil and sprinkle 2 tbsp shredded cheese on top of each pepper. Bake until cheese is melted.

This can also be made using Frozen meatless beef crumbles for less points.
