Appetizers: CHEESE-FILLED EGGPLANT ROLLS FROM LINDA - Thanks Virginia!
1 MED. EGGPLANT, TRIMMED

COOKING SPRAY

2 T. OLIVE OIL

1/2 TSP. KOSHER SALT

1/2 TSP. FRESSHLY GROUND BLACK PEPPER

1 C. BOTTLED MARINARA SAUCE, DIVIDED

1/2 C. PART SKIM RICOTTA CHEESE

1/2 C. (4 OZ.) FETA CHEESE

1 TSP. CHOPPED FRESH PARSLEY

1/2 C. (2 OZ.) SHREDDED, PART-SKIM MOZZARELLA CHEESE


1. PREHEAT OVEN TO 450.

2. CUT EGGPLANT LENGTHWISE INTO 8 SLICES

3. COAT A LARGE BAKING SHEET WITH COOKING SPRAY. PLACE EGGPLANT SLICES ON PAN. BRUSH WITH OLIVE OIL; SPRINKLE WITH KOSHER SALT AND BLACK PEPPER. BAKE AT 450 FOR 12 MINUTES OR UNTIL TENDER. REMOVE FROM OVEN, COVER AND KEEP WARM.

4. REDUCE OVEN TEMPERATURE TO 375.

5. COAT AN 8 INCH SQUARE BAKING DISH WITH COOKING SPRAY AND SPREAD 2/3 C. MARINARA SAUCE IN THE BOTTOM. IN A SEPARATE BOWL, COMBINE RICOTTA CHEESE, GOAT CHEESE, AND PARSLEY. SPREAD 2 T. RICOTTA MIXTURE ONTO EACH EGGPLANT SLICE. ROLL UP SLICES AND PLACE, SEAM SIDE DOWN, IN BAKING DISH. SPOON REMAINING 1/3 C. MARINARA SAUCE ENENLY OVER ROLLS. SPRINKLE MOZZARELLA CHEESE OVER SAUCE.

6. COVER WITH FOIL AND BAKE AT 375 FOR 25 MIN. UNCOVER AND BAKE AN ADDITIONAL 5 MIN. OR UNTIL CHEESE IS BROWNED AND BUBBLY.
