Main Dish: HERBED ZUCCHINI SKILLET - Thanks Rena R!
1/2 cup uncooked long grain white rice OR brown rice-you have to cook this longer though
1 cup water
2 tablespoons evoo or canola oil
1 1/2 pounds zucchini, cubed with or without the skins, and you can use some yellow squash too
1/2 cup sliced green onions
1 clove garlic, minced
2 teaspoons garlic salt
1 teaspoon basil
1 teaspoon sweet paprika
1 teaspoon dried oregano OR 1 t Salad Supreme
1 1/2 cups seeded, chopped tomatoes OR 1 can diced tomatoes
1 cups shredded sharp Cheddar cheese, divided
1 pound cooked extra lean burger-beef or buffalo OR you can leave this out for vegetarian or just as a side dish

1. Combine the rice and water in microwave and push “Rice”. Or cook on the stove

2. Heat the oil in a skillet over medium heat, and cook the zucchini, green onions, and garlic 10-15 minutes, or until tender. Season with garlic salt, basil, paprika, and oregano. Mix in the cooked rice, tomatoes, and 1/2 cup cheese. Continue to cook and stir until heated through. Top with remaining cheese.

3. Heat until cheese is melted and bubbly.
