1 PREPARED ANGEL FOOD CAKE (8 INCHES) CUT INTO 1" CUBES

1 PACKAGE (.3 OZ.) SUGAR FREE RASPBERRY JELLO

1 PKG. SUGAR FREE INSTANT VANILLA PUDDING MIX

1 CAN SLICED PEACHES (WITHOUT SUGAR), WELL-DRAINED AND QUARTERED

3 CUPS COLD FAT-FREE MILK

1 CARTON (8 OZ.) COOL WHIP, THAWED

MINT LEAVES FOR GARNISH

ARRANGE CAKE CUBES IN A 13 X 9 BAKING DISH. DRAIN PEACHES, SAVING SYRUP AND ADD COLD WATER TO MAKE ONE CUP. MAKE JELLO ACCORDING TO PACKAGE DIRECTIONS WITH 1 CUP BOILING WATER, THEN STIR IN THE ONE CUP OF PEACH SYRUP AND WATER. IMMEDIATELY POUR LIQUID JELLO OVER CAKE.

ARRANGE PEACHES ON TOP OF JELLO AND CAKE.

IN A SEPARATE BOWL, WHISK TOGETHER MILK AND PUDDING UNTIL SLIGHTLY THICKENED. SPREAD OVER PEACHES. REFRIGERATE UNTIL JELLO IS SET -- AT LEAST 2 HOURS.

TOP WITH COOL WHIP AND GARNISH WITH A MINT LEAF.
