6 SLICES WHOLE WHEAT BREAD

1/4 CUP SLICED GREEN ONIONS

1 1/2 CUPS LIQUID EGG SUBSTITUTE

1/4 CUP COOKED HAM, DICED

1/4 TEASPOON SALT

1/8 TEASPOON GROUND BLACK PEPPER

1/4 CUP REDUCED FAT CHEDDAR CHEESE, SHREDDED

PREHEAT OVEN TO 350 DEGREES. SPRAY SIX LARGE MUFFIN CUPS OR SIX (6 OZ.) CUSTARD CUPS WITH NON-STICK COOKING SPRAY. TRIM CRUSTS FROM BREAD. SPRAY BOTH SIDES OF BREAD SLICES WITH NON-STICK COOKING SPRAY. PLACE SLICES INTO PREPARED CUPS. BAKE 11 TO 13 MINUTES OR UNTIL TOASTED AND LIGHTLY BROWNED.

SPRAY NON-STICK SKILLET WITH COOKING SPRAY. OVER MEDIUM HEAT, COOK GREEN ONION FOR 1 MINUTE; ADD EGG SUBSTITUTE, HAM, SALT AND PEPPER. STIR CONTINUOUSLY TO SCRAMBLE UNTIL EGGS ARE SET. DIVIDE EQUALLY AMONG BREAD CUPS. SPRINKLE WITH CHEESE AND SERVE.
