1 cup brown sugar
1/2 cup applesauce
1 egg
1 cup buttermilk
2 tsp vanilla
2 cup diced rhubarb
2 1/2 cup flour
1 tsp soda
1 tsp baking powder
1/2 tsp salt

Spray muffin tins with Pam - fill with batter. Sprinkle with topping:

1 tsp melted margarine
1/4 cup sugar
1 tsp cinnamon

Bake at 350, 20-25 minutes.

24 muffins at 2 points each
