Main Dish: CHICKEN SPAGHETTI - Thanks Leader Heather in OH!
1 whole chicken or 4 large boneless breasts, cooked & shredded
2 garlic cloves, diced
1 pound of whole wheat spaghetti, pre-cooked
2 cans cream of mushroom soup
1 16 oz can tomato sauce
1 can Rotel tomatoes
1/2 pound low fat cheddar cheese, shredded
1 small onion, diced & sautéed
1/2 bell pepper, diced & sautéed
salt & pepper to taste

Pre-cook pasta until it's able to bend (about 6 minutes). Do not over cook it prior to baking. Mix everything together in a 9x13 (or slightly larger) casserole dish. Bake for 1 hour @ 375.
