Servings: 1 (3 points)

1 Pita Pocket (1 point Western Bagel brand)

1/3 cup egg whites

1/2 cup mixed bell peppers (red, green & yellow); diced

1/4 medium onion; diced

3 medium mushrooms; diced

2 Tbsp. cheddar or monterey jack cheese; low fat & shredded

Preparation: Coat skillet with nonstick cooking spray & place on medium heat. Sauté veggies for 3-4 minutes or until tender. Add eggs and cheese; stir until egg whites are firm.

Salt & pepper to taste. Fill pocket & serve.
