4 oz uncoooked angel hair pasta
1/2 pound reduced-fat smoked turkey sausage cut into 1/2" slices
2 cups sliced fresh mushrooms
2 garlic cloves, minced
4 1/2 tsp fresh basil or 1 1/2 dried
1 Tbsp olive or canola oil
2 cups julienned seeded plum tomatoes
1/8 tsp salt
1/8 tsp pepper
Cook pasta according to package directions. In a large non-stick skillet, saute sausage, mushrooms, garlic and basil in oil until mushrooms are tender. Drain pasta and add to skillet. Add tomatoes, salt and pepper; toss gently. Heat through.
4 servings at 8 points per serving...makes very good leftovers!
