Appetizers: BAKED SWEET POTATO CHIPS - Thanks Virginia & friends
Homemade chips will liven up all your parties! If leftover chips become soggy, put them back in a hot oven for a few min. to crisp them up.

Makes 4 servings, 1 point each. Core Folks!if you use one of the healthy oils in your book and no more than 2 tsp per day this is Core!

1 large sweet potato, peeled
2 tsp vegetable oil
1/8 tsp table salt, or to taste

Preheat oven to 400F. Spray 2 baking sheets with cooking spray.

Thinly slice potatoes in a food processor or by hand; they should be no more than 1/8-inch thick.

Arrange slices on baking sheets so they dont overlap. Brush with oil and sprinkle with salt. Bake chips until they begin to lightly brown, about 15 minutes. Cool on a rack and serve.
