3/4 pound lean ground beef
3/4 pound ground turkey breast
3/4 cup crushed baked tortilla chips
1 15-ounce can chili beans, drained, rinsed, and lightly mashed
1 1/4 cups medium-hot chunky salsa, divided
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Heat oven to 375 degrees. In a large bowl, mix together beef, turkey, tortilla chips, egg, beans, 1 cup salsa, salt and pepper. (Do not overmix.) Transfer mixture to a shallow baking dish coated with non-stick spray. Shape into a 10” x 5 “ loaf . Spread remaining salsa on top. Bake 1 hour. Remove from oven and let stand for 10 minutes before slicing.
Per serving: 129 calories, 14 g protein, 4 g fat, 6 g carbohydrates, 53 mg cholesterol, 383 mg sodium, 2 g fiber.
