Serves 2, 6 POINTS and CORE!
2 (4 oz.) chicken breasts (split, boneless, skinless)
1 – 15 oz can tomato sauce
1 1/2 tsp. oregano
1/2 tsp. chopped parsley
1/2 tsp. garlic. powder
1/2 tsp. onion powder
1/2 tsp. sugar (use Splenda for Core)
1 – 2 1/4 oz can sliced ripe olives, drained sliced mushrooms (optional)
1/2 c. part skim Mozzarella cheese, shredded (use fat free for core)
Place the chicken breasts into a greased baking dish (Pam). Mix the tomato sauce and all of the spices. Pour over the chicken breasts. Cover and bake for 45 min. at 425º.
Remove cover. Top with the cheese, olives, and mushrooms. Return to the oven and bake for an additional 20 min, uncovered.

4 (.3 oz) boxes sugar free gelatin any flavor
2 1/2 cups boiling water
Pour gelatin into a bowl. Add water, stir until gelatin is completely dissolved, about 2 minutes. Pour into a 13X9 in. pan. Put into refrigerator to chill until firm, about 3 hours. Take pan out of refrigerator. Put about 1 in. of warm water into sink. Dip just bottom of pan into warm water for 15 seconds. Cut into fun jigglely pieces and eat!!
