I have a recipe I just made this morning to submit for the website. I just ran it through the recipe builder, too. It should be Core or 1 point for 6 servings....Rhubarb/Apple Crisp. I used fuji apples in the recipe and think that Gala would be nice too. A sweet red apple is a nice complement to the Rhubarb. I used our WW Apple Cinnamon Oatmeal and figure the new strawberry one that will be coming out later will be good in this one too. ~Kathryn

1 3/4 cup rhubarb
2 medium apple(s)
1/8 cup uncooked oatmeal
1 serving Weight Watchers oatmeal
1 tsp fresh lemon juice
4 tsp McNeil Nutritionals Splenda sugar blend for baking
1/2 tsp ground cinnamon
1 tsp I Can't Believe It's Not Butter! Spray
1 sprays cooking spray

Cut rhubarb into 1 inch pieces and microwave w/1 tsp of Splenda and lemon juice for 3 minutes.

Cut apples into small pieces and mix with rhubarb mixture.

Spray oven proof dish with cooking spray, add rhubarb/apple mixture. Stir in both oatmeals and the remainder of the splenda and cinnamon and lightly coat fruit. Spray top with ICBINB and bake at 350 for 25 - 30 minutes until apples are tender.

Store left over crisps in small containers.
