Crockpot: MEXICAN MINESTRONE - Thanks Sherry, Staff Site (Points figured)

2 15 oz cans black beans, rinsed and drained
2 14 1/2oz cans Mexican style stewed tomatoes
2 14 oz cans vegetable broth
1 15 1/4 can whole kernel corn, rinsed and drained
2 C diced red skinned potatoes
2 C frozen cut green beans
1 C Salsa

*I couldn't use Mexican stewed so used regular stewed tomatoes. This was a little bland when I tasted so I added salt, pepper & about 3 drops of Tabasco. I think using Rotel tomatoes would be good & also frozen corn would be nice. I also saw a recipe similar that called for some chili powder.

I used chicken broth because I can't have the veg. broth.

Combine all ingredients in a 5 or 6 quart slow cooker. Cover; cook on low heat for 9 to 11 hrs or on high heat for 4 1/2 to 5 1/2 hrs. Serve with ff Sour Cream & reduced fat cheddar cheese if desired but count the Points!
