2 tsp olive oil
1 serving Goya Sofrito, 1/4 Cup
2 clove garlic clove(s)
1 cube chicken broth or bouillon, dry
1/2 cup cooked brown rice
1/2 cup cooked frozen mixed vegetables, with salt, 8oz bag
1/2 cup canned chickpeas, 15.5oz can no water
1/2 cup Progresso Red Kidney Beans, 15,5 oz can
8 oz reduced-sodium, fat-free chicken breast, Cubed
1 1/4 cup water
1. In a medium casserole, heat the olive oil. Saute the chicken cubes until brown.
2. Add the sofrito, garlic, sazon, bouillon, water and bring to a boil.
3. Add the rice and season to taste. Cover and simmer 20 minutes.
4. Add the vegetables, cover and simmer for 5 more minutes until vegetables are tender. Serve with grated cheese.
