"I love tacos, my son likes mac & cheese. I found this a good compromise since he won't eat tacos (he doesn't like hamburger), and I won't eat mac& cheese (too many points for something I don't like that much)! This actually came out way better than I expected, and it fits my new 2007 food slogan:

"If I don't LOVE it, I don't SWALLOW it!" (the food critic in Disney's Ratatouille describing his job!) I always add in, "Because then I have to count it!"

Taco Bake

Level of Difficulty: Easy
Makes 6 servings, at 1 cup each.

3/4 cup Taco Cheese
1 box Kraft Mac & Cheese (macaroni and cheese powder)
1/4 cup 1% low-fat milk, Used to make mac & cheese
1 cup fat-free sour cream
1 pound 90% lean/10% fat raw ground beef, browned and drained
1 1/4 oz Taco Bell Home Originals Taco Seasoning Mix, 1 package
1/2 cup salsa, Add salsa before serving, if desired.
3/4 cup water

Preheat over to 400 degrees. Prepare macaroni dinner using 1/4-cup 1% milk and no butter. While macaroni is cooking, brown meat, drain. Add taco seasoning mix and water to meat. Simmer 5 minutes. Stir Sour cream into prepared dinner. Spoon 1/2 the macaroni mixture into a baking dish. Top with meat mixture, 1/2 cheese, and remaining macaroni mixture. Add remaining cheese. Cover. Bake 15 to 20 minutes. Top with salsa.

If 80% ground beef used, add 2 points per serving.
If 85% ground beef used, add 1 point per serving.
I also used Taco Cheese, but be sure to adjust based on the point value cheese you use.
(Taco Cheese- 1/3 cup serving- 110 cal, 9 grams fat, 0 fiber)
Tortilla chips, olives, or corn can also be added to the mixture as desired, just remember to add the points!
