Core Recipe; 5 points on Flex
32 oz bag Core frozen hash brown potatoes (such as Cascadian brand) or shred your own
8 oz lean ham, cubed
1 med onion, diced
1 med bell pepper, diced (optional)
1-1/2 cups shredded fat-free cheddar cheese (i used tj's shredded soy 3 chz blend)
1 cup fat-free milk
1/2 tsp salt
1 tsp pepper
(*I also added some tastefully simple seasoned salt-but definitely add some type of your favorite spices)
In a 4 to 5 quart Crockpot, layer 1/3 each of the frozen potatoes, ham, onion, bell pepper, and cheese. Repeat 2 times.
Beat together eggs, milk, salt and pepper. Pour over mixture in crock. Cover and cook on Low for 8 to 9 hours.
