POINTSŪ Value: 4 (There are 7 Points in the olive oil so if you use only 1 Tbsp you can half the Points on this recipe)
Servings: 2

3/4 cup tomato(es), diced (or 1 whole tomato)
1/4 cup red onion(s), finely diced
1 large olive(s), black olives sliced lengthwise
1 Tbsp capers, rinsed & drained
2 Tbsp olive oil
1 Tbsp red wine vinegar (orig recipe calls for 1 tsp but Carol likes 1 Tbsp)
1/4 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder

Put mixture on top of grilled chicken breasts. (add Points for chicken breasts).
You can try increasing salt, pepper & garlic powder to taste.
