Breakfast: FRUITED FRENCH TOAST CASSEROLE - Thanks Virginia!
2 whole eggs, slightly beaten

3 egg whites

1/2 cups fat free sour cream

1 tsp cinnamon

1 tsp salt

2 tsp vanilla

1/2 cup Splenda, granulated

1 1/2 cup skim milk

dollop of butter spray

1/2 cup raisins

1 apple, peeled and diced

4 stale wonder light buns, cubed

Spray an 8" square glass baking dish with non stick cooking spray. Arrange bread cubes in dish and sprinkle fruit evenly over the top. Set aside. Place all remaining ingredients in a bowl and stir until smooth. Pour evenly over bread/fruit and let set several hours or overnight. Place baking dish in a 325 degree oven and bake 1 hour or until golden brown and inserted knife comes out clean. Serve hot w/lite or sugar free syrup.

Makes 4 servings @ 5 points each or CORE + 2 points
