Appetizers: PARMESAN ZUCCHINI STRIPS - Thanks Virginia!
Makes 4 servings at 2 Points each.
1/3 Cup Italian Seasoned Bread Crumbs
1/4 Cup Grated Parmesan Cheese
4 Small Zucchini quartered lengthwise
1 Egg, well beaten (You can also use Eggbeaters)

In a bowl combine the bread crumbs and the grated parmesan cheese
Dip Zucchini in the egg, then coat with the crumb mixture.
Place on a lightly sprayed baking sheet.
Bake at 450 degrees for 20-25 minutes or until golden and tender.
