8 SERVINGS @ 1 Point

8 medium yellow summer squash
1 small onion(s)
1/2 tsp table salt
1/4 tsp black pepper
1/4 Tbsp basil
8 oz fat-free sour cream
1/2 cup low-fat shredded cheddar cheese
3 Tbsp seasoned breadcrumbs

Cut squash into circles. Chop onion. Boil squash & onion together until soft. Drain & mash. Combine salt, pepper, basil, & sour cream. Add to squash. Spray casserole with non-stick cooking spray. Place squash mixture in dish. Top with cheese and breadcrumbs. Bake at 350 degrees about 30 minutes, until top brown.
