1 pound uncooked ground turkey breast
1 medium apple(s)
2 clove garlic clove(s)
3 cup cooked brown rice
1 tsp black pepper
1/2 large onion(s)
1 tsp ground oregano
1 tsp ground basil
1 tsp dried thyme
1/2 tsp Marjoram, dried
1/2 tsp dried rosemary
3 Tbsp parsley
Fresh Parsley makes all the difference. You can substitute about 3 tsp.
dried parsley if fresh is not available.
Cook 1 cup brown rice according to package directions and let cool(makes 3
cups). Chop onion and apple finely, discarding core. Mince garlic and
parsley. Combine all ingredients and mush together well using hands (and
fist, if necessary!) until ingredients bind. These patties have a tendency
to break apart, so be sure to mush vigorously! Pick up a baseball size chunk
to form a tight 1/2" thick patty. Coat a Dual-sided countertop grill
appliance with cooking spray. Cook patty about 3-4 minutes or until cooked
all the way through (170 degrees). If you don't have a 2-sided grill, coat a
non-stick (lidded) fry pan with cooking spray and cook (covered) for about 4
minutes per side on medium heat until cooked through.
Freezes well. Thaw and reheat in microwave. Makes 7 patties
Filling and satisfying. Serve plain, or with dijon mustard. Add a
Whole wheat bun, lettuce, tomato and onion to make a burger out of it (don't forget to count the extra points!). Delicious.
