2 C Fresh Blueberries
2 C cubed cooked chicken breast
3/4 C chopped celery
1/2 C diced sweet red pepper
1/2 C thinly sliced green onions
WW lemon yogurt (6 oz)
3 T reduced mayo
1/2 tsp salt
Bibb Lettuce (as a garnish on the bottom)
Set aside a few blueberries for garnish.
Gently mix chicken, peppers, onions, blueberries, and celery in a bowl.
Mix yogurt, mayo, salt; pour this over the other items.
Cover; refrigerate for 30 min, then serve over Bibb lettuce; top with the extra bluberries.
