1 3⁄4 cups Fat Free chicken broth
6 Tbsp corn grits-uncooked
1 TBSP olive oil
1 small onion-diced
1 cup mushrooms-sliced
1 medium jalapeno pepper, seeded and minced
1 medium red bell pepper, chopped
1 medium tomatoes- cored and chopped
1⁄4 tsp ground cumin
1⁄2 tsp salt
1⁄4 tsp black pepper
1 pound skinless chicken thighs OR BREASTS-boneless, cut into chunks
1. Place broth in slow cooker. Slowly add grits, stirring constantly to avoid lumps.
2. Heat oil in skillet over medium heat. Add onion, garlic, mushrooms, jalapeno and red pepper; sauté, stirring frequently about 5 minutes. Add vegetables to the slow cooker. Brown the chicken. Add chicken and rest of the ingredients to the slow cooker.
3. Cover and cook on Medium setting 5-6 hours.
