Fresh or Jarred garlic
Sauté for a few minutes
Cut up Zucchini
Cut up Mushrooms (white button & portabella)
Toss in Pan and Sauté with oil, garlic and onion
You can add squash or any other veggies you like
Toss in one or two cans of flavored diced or stewed tomatoes (any flavor you like, mix and match if you want.)
Pepper to taste
I also use Nature's Seasonings spice to flavor a Bit more.
Heat through and serve as a side dish, over pasta, rice or over a baked potato or tortilla. Add chicken, beef, pork or fish..and warm together
