2 CUPS COOKED CORN FROM THE COB OR 1 CAN OF CORN

1 AVOCADO, LARGE OR 2 SMALL

1 PINT CHERRY TOMATOES

1/2 CUP FRESH CILANTRO (OPTIONAL)

1/2 CUP SALSA

1 TBSP OLIVE OIL

1/2 TSP SALT

1/2 TSP BLACK PEPPER

PLACE CORN IN MEDIUM BOWL. DICE AVOCADO INTO APPROXIMATELY 1/2 INCH PIECES, SLICE TOMATOES IN HALF, AND CHOP CILANTRO.

PLACE INTO BOWL WITH CORN. ADD SALSA, OLIVE OIL, SALT AND PEPPER. MIX TO COMBINE ALL INGREDIENTS AND SERVE.

1 CUP @ 2-POINTS EACH OR CORE
