1 box of yellow cake mix
4 eggs (or you can use egg beaters)
1 can (11oz.) mandarin orange in light syrup
Preheat oven to 350 degrees. In a large bowl, stir together all the cake ingredients until moist. Beat by hand for 2 minutes.
Spray 9x13 cake pan with non-stick cooking spray. Pour the batter into the pan. Bake for about 35 minutes or until toothpick inserted in center comes out clean. Cool completely.
1 container 8oz. lite whipped topping
1 package (4 serving size) instant vanilla sugar free/ fat free pudding mix
1 can (15 1/2 oz.) crushed pineapple in its own juice
Mix the pudding mix and pineapples together until well blended. Stir in the whipped topping. Spread over the cake and store in the refrigerator.
