Breakfast: BREAKFAST CASSEROLE - Thanks Debbie, Staff Site
1 lb shredded potatoes (ex. Simply Potato Shreds)
1/2 lb diced ham
1/2 c. chopped onion
3/4 c. 2% shredded cheddar cheese *fat-free for Core*
2 eggs
1 cup egg substitute
1/2 c. skim milk

In crock pot sprayed with cooking spray, layer ingredients in order, using 1/3 of them: potatoes, ham, onions, cheese, repeat 2 times ending with cheese.

In bowl, beat eggs and milk, salt and pepper to taste and pour over layers in crock pot. Cover and cook on low for 8-10 hrs.

Makes 6 servings at 4-Points per serving.

***This is really good. We doubled the batch and it was great. Nice to have breakfast ready when you get up. Only downfall is that it smells SOOOO good, you may want to eat it all in the middle of the night . . . Don't say I didn't warn ya!
