Salads: CLASSIC THREE-BEAN SALAD - Mo Parrish (TurnAround Cookbook, p. 64)
2 Tbsp white-wine vinegar
1 Tbsp red-wine vinegar
1 Tbsp chopped fresh basil
1 Tbsp olive oil
2 tomatoes, chopped
1 cup canned red kidney beans, rinsed & drained
1 cup canned cannelloni (white kidney) beans, rinsed & drained
2/3 cup (2-inch lengths) trimmed fresh green beans, steamed
4 scallions, sliced
1/4 tsp salt
1/4 tsp freshly ground pepper

Combine the vinegars, basil & oil in a large bowl. Add the tomatoes, red kidney beans, cannelloni beans, green beans, scallions, salt & pepper; toss to coat. Refrigerate, covered, until chilled, about 2 hours.
