2 lbs.Yukon Gold potatoes

1 Tbsp. olive oil

1/2 tsp. rosemary leaves

1/2 tsp. salt

1/2 tsp. pepper

Slice 2 lbs. Yukon Gold potatoes into 1" chunks; drizzle with 1 Tbsp. Olive oil and 1/2 tsp. Each crumbled rosemary leaves, salt, and pepper. Spread on a shallow baking sheet and roast at 375 degrees until tender, about 45 minutes.
