Main Dish: CHEESE ZUCCHINI CRUST PIZZA - Thanks Elaine! (Staff Site)

3 cups shredded zucchini
3/4 cup fat-free egg substitute
1/2 tsp table salt
2 medium tomato(es)
1/2 cup onion(s)
1/2 cup green pepper(s)
1 tsp dried oregano
1/2 tsp dried basil
1/3 cup whole-grain white cornmeal
1 cup shredded fat-free mozzarella cheese
1/2 cup shredded fat-free cheddar cheese

Combine zucchini and egg substitute in a bowl; mix well. Add flour and salt, stir well. Spread onto bottom of a 9 X 13 inch pan coated with Pam. Bake at 450 for 8 minutes. Reduce heat to 350. Remove crust from oven, sprinkle with mozzarella and cheddar cheese, tomatoes, onions, green peppers, oregano, basil and parmesan cheese. Bake for 15-20 minutes or until cheese is melted.
