One serving = 2 points
3 egg whites or 1/3 cup egg substitute (1 point)
1/4 cup grated nonfat cheddar cheese (1 point)
1/2 cup cooked, drained spinach
Spray 8 inch nonstick skillet with nonstick spray. Pour in eggs. Sprinkle with cheese. When almost set, place drained spinach on 1/2 of mixture. Then fold one side over the other, omelette style. Let sit for about
30-60 seconds (off the burner)and the omelette will puff up more. I've tried it with adding our required oil....not that great. This omelette is quite good with salsa, wrapped in a low point tortilla (yummmm).
4 cups of raw spinach in a 4 cup glass measure + a little water.
Cover with saran wrap. Microwave for two minutes. Drain. = 1/2 cup cooked spinach.
