A new recipe I tried this week, very yummy if you like Rhubarb. I added a tiny bit of cool whip, but you could also add ice cream on top- just count the extra points. ~Elaine

Light Rhubarb Crunch
9 servings @ 3points each
6 cups chopped rhubarb
1 teaspoon cinnamon
1 small pkg. Sugar-free raspberry jell-o
1/2 cup orange juice
2 teaspoons vanilla
2/3 cup flour
1/3 cup oatmeal
1/2 cup brown sugar
1 teaspoon cinnamon
2 tablespoons margarine
2 tablespoons orange juice
1 small pkg. Sugar-free raspberry jell-o

Combine rhubarb, cinnamon, jell-o, vanilla, and 1/2 cup orange juice in a 9-inch square-baking dish. Blend remaining ingredients in a small mixing bowl until crumbly. Sprinkle crumbs over rhubarb mixture. Bake uncovered for 45 minutes at 350 degrees, just until bubbly.
