Main Dish: ITALIAN POTATO VEGETABLE BAKE - Thanks Kathy S!
Makes 4 servings, 3 Points/serving

3 C raw potatoes, thickly sliced
16 oz pkg frozen carrot, broccoli & cauliflower blend
3/4 C fat-free shredded mozzarella
2.5 oz jar/can sliced mushrooms
2 tsp Italian seasoning
1/8 tsp pepper
15 oz can chunky tomato sauce

Preheat oven to 350. In medium saucepan, cook potatoes & veg blend in water until potatoes are almost tender (2o minutes); drain. Spray 8X8 dish w/non-stick spray. In medium bowl, combine potato-veg mixture w/mushrooms, Italian seasoning & black pepper. Pour in baking dish. Pour tomato sauce evenly over top; sprinkle w/cheese. Bake 30 minutes. *4 oz diced chicken breast can be added (add 1 Point/serving for Flex)
