1/4 cup Wishbone Fat-Free Italian Salad Dressing
1 sweet onion – sliced
1 or 2 cloves garlic - minced
1 Can Del Monte Italian Style
1 zucchini - peeled and sliced
1 yellow squash - peeled and sliced
1 red bell pepper – cut into strips
1 green pepper – cut into strips
Pasta and cheese
Saute the onion and garlic in the salad dressing until onions start to soften. Add the stewed tomatoes and bring to a boil. Add remaining ingredients, cover and simmer (stirring occasionally), until all veggies are tender.
This whole thing makes FOUR SERVINGS and is only ONE POINT per serving.
Serve over 1 cup of your favorite wheat pasta (3pts) and top with 3/4oz fresh shredded Italian cheese (1 point). 5 points per serving for the pasta, veggie sauce and cheese. Gives you a nice big helping for very few points!
