2 russet potatoes, peeled
2 sweet potatoes, peeled
1 Extra-large egg
2 tablespoons extra virgin olive oil, plus extra for oiling the baking sheet
1/2 tsp chili powder
Salt and pepper to taste
1. Preheat oven to 400 degrees. Slice potatoes in half lenghtwise, then
slice each half into 4 wedges.
2. Combine the egg with the olive oil and chili powder in a large, shallow
bowl: whisk to combine.
3. Add the potatoes to the egg mixture and toss to coat.
4. Arrange the potato wedges on a lightly oiled baking sheet so that none
of the wedges are touching. Bake for 35 to 45 minutes, turning several
times after the first 15 minutes, until fries are golden. Season with salt
and pepper and serve.
