An alternative to the traditional quiche. This is a Core recipe. The brown rice crust is surprisingly good.
You can substitute whatever veggies you have on hand.
2 cups cooked brown rice hot and sticky
1/4 cup egg substitute
1 tablespoon parsley,
1/4 teaspoon garlic powder
1/4 teaspoon season salt
1 cup chopped red onions
1 cup asparagus spears or 10 oz box of defrosted spinach or broccoli drained well
1/2 cup carrots chopped well
1 teaspoon olive oil
1/2 cup fat free cheese
1/3 cup fat free milk milk
10 ounces egg substitute
1/4 teaspoon dry mixed Italian herbs
Preheat oven to 350F
Combine crust ingredients. Mix well. Press over sides and bottom of a 9" non stick cake pan. Bake 15 minutes until crust is set,
In a mixing bowl combine veggies and oil and all other ingredients. mix well.
Pour mix into crust and bake until center is set about 30 to 40 minutes. Let sit 5 minutes before serving.
