Salads: BEAN//VEGGIE SALAD
BEAN/VEGGIE SALAD

15 oz can of black beans, drained and rinsed
15 oz can of pinto beans, drained and rinsed

(with them I used) Large green pepper seeded and chopped
Large onion chopped
3 large carrots cleaned and shredded (or chopped very fine if you have dentures)
4 stalks celery chopped fine.
3 roma tomatoes, chopped
1 can black olives sliced

I used 1/4 cup "wishbone" just 2 good (2 grams of fat) Italian dressing.
This made about 3 quarts (12 cups) of food, at 1 point per serving.

If I would have had other veggies in my fridge, I would also have used cauliflower, bean sprouts, broccoli, whatever. Veggie list is endless. But can do whatever your tastebuds allow.
