Curry and cilantro add a unique Indian twist to this creamy, colorful side dish. Calories and fat are super-low thanks to non-fat yogurt.
16 oz packaged coleslaw mix (shredded cabbage and carrots)
1 1/2 cup plain fat-free yogurt
1/4 cup cilantro, fresh, chopped
1 tsp curry powder
1 tsp white wine vinegar
1/8 tsp table salt, or to taste
1/8 tsp black pepper, freshly ground, or to taste
1. In a large bowl, combine coleslaw mix, yogurt, cilantro, curry powder and vinegar; toss to combine. Season to taste with salt and pepper.
2. Cover bowl and refrigerate until ready to serve. Yields about 1 cup per serving.
