You will need 2 sheets of foil lightly sprayed with Pam. Cut peppers into short thin strips. Cut onion into thin wedges. Drain pineapple

2 breast uncooked boneless, skinless chicken breast
1/8 tsp table salt
1/8 tsp black pepper
1 medium green pepper(s)
1 medium sweet red pepper(s)
1/4 cup onion(s)
1/2 cup canned chucked pineapple, water-packed
2 Tbsp low-sugar orange marmalade
1 Tbsp distilled white vinegar
2 tsp cornstarch
2 tsp soy sauce
1 cup cooked brown rice

Preheat oven to 450. Place chicken breast in center of foil. Season with salt and pepper. Place 1/2 of bell peppers and onions on each chicken. Top with pineapple chucks. Combine marmalade, vinegar, cornstarch and soy sauce in small bowl. Stir until cornstarch is dissolved. Pour over chicken/vegetables & pineapple Fold over sides and ends of foil to make a pocket. Crimp tight to seal. Place one knife very small hole at top to vent. Place pockets onto baking sheet. Bake pocket on baking sheet 16 to 20 minutes. Carefully open pockets and transfer chicken on top of 1/2 cup of hot brown rice enjoy
