AN OLD WEIGHT WATCHER RECIPE FOR QUICK BREADS
GREAT FOR BREAKFAST OR LUNCH

SERVES 4, 3 POINTS EACH

4 SLICES REDUCED CALORIE BREAD (DRIED OR TOASTED AND PROCESSED INTO FINE CRUMBS)
1 1/3 C POWDERED FF MILK
1 t BAKING POWDER
10 T SPLENDA
4 T FLOUR

ADD TO BREAD CRUMBS:
1 C EGG BEATERS
1 t VANILLA EXTRACT

PUT IN BLENDER AND WHIP UNTIL FLUFFY
ADD ANY OF THE FOLLOWING COMBINATIONS

VARIATIONS:
2 MEDIUM BANANAS + 1 t CINNAMON-BLEND UNTIL SMOOTH
2 C UNSWEETENED APPLESAUCE + 1 t APPLE PIE SPICE
2 C CRUSHED PINEAPPLE IN JUICE
2 C BLUEBERRIES
2 C UNSWEETENED CHERRIES
2 MEDIUM CARROTS GRATED + 1 CUP CRUSHED PINEAPPLE
8 OZ PUMPKIN + 2 t PUMPKIN PIE SPICE + 1/2 C SPLENDA
2 C GRATED ZUCCHINI + 1/2 C SPLENDA + 1/4 t NUTMEG & 1/4 t GROUND CLOVES

COMBINE INGREDIENTS AND BAKE IN ONE LARGE OR 2 SMALL LOAF PANS AT 350 FOR
30-45 MINUTES UNTIL TOOTHPICK COMES OUT CLEAN.
MAY BE TOPPED WITH A BIT OF REDUCED FAT COOL WHIP, BREMMEL AND BRAUN FRUIT
YOGURT SPREAD, RICOTTA CHEESE WITH A FLAVORED EXTRACT AND SOME SPLENDA TO
TASTE. ADD POINTS AS NEEDED.
