BROWN SUGAR GLAZED CARROTS

1 TBS butter

2 LB bag baby carrots

1 TBS light brown sugar

1 TBS chopped candied ginger

1/2 tsp ground nutmeg

1/2 tsp. salt

1/2 cup water

Melt butter in skillet. Add remaining ingredients and bring to a boil and cover. Simmer over medium heat 10 minutes or until tender and water is evaporated. Uncover and cook on high 5 minutes.
