Soups | * Use the water when sauteeing the veggies. You may need to increase this to 1/2 cup.

1/2 pound celeriac
2 large stalk celery
2 clove garlic clove(s)
1 medium onion(s)
1/4 cup water
29 oz fat-free chicken broth

Saute in non-stick pan with oil spray the sliced celery, celeriac (celery root that has been peeled and cubed), sliced onion, and minced garlic, uncovered until heated through and fragrant.(*) Add the two cans (14-1/2 oz. ea) of broth, simmering until veggies are soft. Puree in food processor. If celeriac (celery root) is a large one, double recipe adding extra celery and broth.
