Serves 6, 3 pts ea.

1 Tbsp olive oil
2 large carrot(s) coarsely chopped
2 medium stalk celery, sliced
1 large onion(s) chopped
3 clove garlic clove(s)
14 1/2 oz Del Monte Diced Tomatoes, No Salt Added
28 oz vegetable broth
15 oz Progresso Red Kidney Beans, rinsed and drained
1/4 cup uncooked barley
2 cups spinach, firmly packed

Heat oil in saucepan; add carrots, celery, onion, garlic and cook until tender. Add tomatoes, broth, beans, barley. Heat til boiling. Reduce heat to medium; cover and cook 30 minutes, or until barley is done. Stir in spinach and season with coarse ground pepper. Heat through.
