Cakes: BANANA RAISIN MUFFINS - Thank you Gina R. (member)


2 slices Weight Watchers 100% whole wheat bread crumbled like bread crumbs
2/3 cup nonfat dry milk
1 tsp all-purpose flour
1 tsp baking powder
2 Tbsp butter melted
1/2 cup fat-free egg substitute
1 large banana(s)
1 tsp vanilla extract
1/8 tsp ground Cinnamon

1/3 cup raisins
1/8 cup sugar

Mash banana. Crumble bread. Melt butter. Preheat oven to 375. Combine bread crumbs, dry milk, flour, and baking powder in mixing bowl. Mix all together. Add remaining ingredients. Mix well. Spoon equal amounts into Pam-sprayed muffin pan. Bake for 15-20 min.

You can substitute one apple for one banana.
